Shrimp were a good price at Wegmans today, so I bought a pound for one of my "let's cook something with seafood" nights. It occured to me in the store that it might be neat to try it in a linguini and clam sauce recipe. Then I remembered the 16.5 ounce jar of Wegmans store brand vodka sauce in my cupboard. I pictured a red clam sauce based around the vodka sauce with the shrimp added in for the last few minutes so that they would be nice and tender.

Ingredients:
1 lb linguini, cooked and drained
1 large broccoli crown, chopped and steamed
+/- 1 Tbsp. herb and garlic basting oil
minced garlic to taste (1-2 cloves?)
+/- 1/2 cup Vodka
4 cans chopped clams, loosely drained, some liquid left in the clams
1 16.5 oz jar of your favorite vodka sauce
1-2 cups frozen spinach
1 lb shrimp, peeled


Here's what transpired: I put about a tablespoon or so of Wegmans basting oil (with herbs and garlic in it) in the pot to heat, added about half a cup (give or take) of vodka and a couple cloves worth of minced garlic since the clams would be simmering a bit before adding the vodka sauce, loosely drained four cans of chopped clams leaving some of the juice in with them, then dumped them into the heated oil/vodka/garlic mixture to simmer. When the liquid reduced by about half, I added the vodka sauce and about a cup and a half of frozen spinach. I stirred until that thickened a bit, added the pound of shrimp and cooked until they all turned pink in a few minutes.

I served this over linguini and finely chopped steamed broccoli. Usually with foods like this, I lump in the pasta and the veggies with the sauce so everybody gets some of each. This worked out just as well. Even Aidan loved it. Before this he insisted that the only way he liked shrimp was in teriyaki sauce. I "mmmmm"ed so much while eating that he reminded me I didn't have to say "mmmm" every minute.

What to call it... Vodka Clam Sauce? Vodka Seafood Sauce? Drunken Clam Sauce? How about calling it dinner...
